PREPARATION OF BAKED GRAM
Introduction
Baking of gram also known, as Hawai Ngouba is one of the main sources of income of the Manipur State. Baking of gram consists of Soya bean, dry pea and grams, which is a staple food of the rural population. It is a low cost and has a good nutritional value. It is taken in different forms viz., mixing with mustard oil and grinding.
Market potential
It is highly demanded as it is the favorite food of the rural population. There are a few units making this and their production is not adequate to meet the demand of the local population.
Materials Required
1. Gram
2. Soya bean
3. Dried pea
4. Sand
5. Khang(a large frying pan)
6. Cane basket
7. Small wire gauge
8. Firewood
9. Mustard oil
10. Oven
11. Broom
Process
The main steps are: -
- Making the fire with firewood
- Heating the khang with sand with some drops of mustard oil in order to make a shining color of the gram
- Frying the grains in the khang with the help of broom
- Taking out the grain after baking

Some information regarding the baking grams
It is one of the main occupations of the rural people. It is the main source of income of the rural population. The cost of fresh gram is ranges from Rs. 17/- to Rs. 20/- per kg and the cost of baked ones is ranges from Rs.25/- to Rs. 30/- per kg. In a day they can bake about 50 kgs of gram. So, their per capita income is Rs 84,000/-approximately.
